i really like my mooc and am learning a lot more stuff to put in my devils syrup book. i don’t do all the forum work, but i do all the quizzes and it’s really interesting.
speaking of the devils syrup book, i haven’t written in it in a while. it’s been a little busy this month, so i’ve sort of put it off. i really need to pick up on it again, and since the next chapter is the environmental one (oy), i’m going to really want to have to get going on it. my dad was supposed to bring the hard copies i’d printed off for him to the reunion to give to jane, but i think he forgot, and i forgot, and so it was a bust. i’m sure when they move they’ll get lost. oh boy!
anyway, i would recommend taking a mooc. very interesting, and totally opt in.

i made some marshmallows to take to the reunion since plain jane ones from the store have devil’s syrup in them. it was my first time working with gelatin, so that was interesting (i never said i needed vegan marshmallows…). anyway, it was pretty easy. boil together water and sugar while the gelatin chills in some water, mix in the gelatin and bring back to a boil. then whip it for 10-15 mins until it looks nice and fluffy, like marshmallow…fluff.

it actually looks a lot like meringue. add some vanilla and salt (i also added a wee bit of almond extract) and pour into a pan to set.
IMG_9404and that’s where we’re sitting right now. hopefully tomorrow it’ll be less tacky to the touch and i can slice them up and roll them in powdered sugar. smores here i come!
(on a side note, i realized today that everything i’m bringing treatwise to the lake is gluten-free – good for kathy and josie, i guess!)

so i’ve been living another lie! i think the fda has recently started requiring food companies to list ALL ingredients, even those that comprise a very small amount. which means that things that have contained DS have gotten by me because it wasn’t required for it to be listed! but i’ve been seeing a lot of ingredients lists with a big old “Contains less than 2% of the following:…” and lots of times, DS is listed.
the only thing i could find in a quick internet search is this lady’s blog who lists the “2%” rule (#1).
case in point: M&Ms. i know i had read the ingredients list of M&Ms in the past and deemed them ok. yesterday i bought a $9 party pack for monster cookies, and guess what’s listed on the ingredients as less than 2%? yep, devil’s syrup.sigh. the damage was done, as that little DS isn’t going to affect my bowels in any way, and my goal is primarily monetary. now i’m going to have to start reading the ingredients lists of foods i’d already deemed awesome.
so while some companies are changing their recipes, ie honeymaid grahams, special K, worcestershire sauce, others are now finally required to list all their ingredients. i can’t win!

i asked my sister liz to write a guest post! here it is!
omg, this got long. i hope you actually read it. i try not to be boring.
kate wanted me to guest blog on her blog. i tend to blog about boring stuff that happens in my daily life that only those who know me could possibly be interested (and sometimes not even then). i needed a prompt. it’s only fair; she’s been using prompts for awhile now (note the awesome semicolon action – meee oowww). so she suggested i write about how her quest for a corn syrup free life has influenced mine.
thus, a blog post was born…
prior to kate’s anti-corn agenda, i was on my own anti-partially hydrogenated soybean oil (henceforth known as phso) agenda. why, you ask? well, it all started back in middle school when i was visiting extended family…
the daughter of kate’s and my crazy aunt (of whom kate has referenced many a time) is a nutritionist. she bent the ear of my dad and me over b-fast one day about trans fats and cis fats. this was back in the day before trans fat became a buzz word and everyone knew about it. cousin was telling us that phso has trans fats and it basically mutates human cells to become more susceptible to cancer and other crap. that didn’t sound good to me.
so i started reading ingredient lists and worked to avoid phso. it’s hard to do that when you’re not buying the groceries. when i was old enough to do so, i avoided phso at all costs. i would put things back on the shelves. i’d look at different brands. i was crushed to find out crisco is basically all phso… that was the one exception to my vendetta since a lot of baking calls for crisco.
but saltines! for ages i thought i couldn’t eat saltines because of phso. until i started looking at other brands. lo and behold, other brands didn’t use it! thank you zesta! i could still eat saltines and cream cheese!
oh, you haven’t tried that? you should. it’s delicious. nom.
so when kate started her anti corn syrup agenda, i paid attention. i like having a nerd for a sister who will do all the research work and tell me just the pertinent parts. saves me a lot of work.
i already knew hfcs was bad. regular pop makes me sick. literally. i have a can of pepsi, and i need the bathroom pronto. gross.
so i was onboard with paying more attention to what had cs and hfcs and cs solids (can i just say that the idea of corn syrup solids sounds really really gross?) in it.
since i had experience reading ingredients, it wasn’t a hardship to pay attention to whether or not there was cs in it too. but my oh my, cs is waaaaayyy more prevalent than phso.
phso mainly shows up in packaged food items that need a longer shelf life – cookies, crackers, etc. it’s in food in all those aisles you’re not supposed to shop in anyway.
cs is in eeevvveerrrryyyyythiiiiinnnngggg. omg, it’s so annoying to avoid.
we had to buy andouille sausage the other night. the only stuff available at target has cs in it. we bought it anyway.
i will read labels, i will avoid it where i can, but if it’s the only option and i really want it, i will get it. but i try really hard to avoid it in my groceries.
eating out, however, is whole different ball game. i still eat sandwiches from mcdonald’s. i really should not be eating there. i know this. but sometimes, it’s an easy, quick option. especially since i’m not the cook in my house. and when my cook is working at school or asleep because his schedule is crazy, i will sometimes splurge and get mcd’s. it’s cheap, they have coke zero (NOM), and they have drive through which is extremely handy when you have a 3 1/2 month old as long as she’d not crying.
i don’t read ingredients lists of the restaurants i frequent. i probably should, but i don’t.
i did have to change my bread habits. there is cs in a lot of the bread on the market. i bought a fresh loaf of italian bread from target the other day without reading the ingredients. it’s fresh! it should be okay. today i looked at it and found out there are corn syrup solids in it!! wtf?? that’s annoying. i’m still eating it. it’s a perfectly good load of italian bread and makes great french toast.
okay, this blog post has become ridiculously long. kudos to you if you’re still reading this. 🙂

i had my interview with my cousin tom, which wasn’t so bad! he could talk for hours and hours if you’d let him. one thing it’s hard for me to wrap my head around though is that he and george are severe conservationists, yet severe republicans (more like libertarians, but that’s another story).
when they set up part of their land to be a part of a 15-year lease to pretty much give the land back to nature, they took government money for it. yet, the government needs to keep its fingers out of the regulations. but, if farming went south here, we’d have to import from countries where regulations aren’t held to a certain standard and there is no USDA. i’m so confused!!! *boggle* either you want government or you don’t. can’t have it both ways!
another thing that confuses me is how adamantly pro-land/pro-environment you can be, yet think tree-huggers are the devil (he also had some choice words to say about PETA that I had to agree with – hahah).
i’ve got to call my dad and see what his take is on this and see if he can explain the mindset to me.

i never imagined i would move my month-long experiment to a lifestyle change. from eating mcdonald’s and drinking regular pepsi on a weekly basis and not caring about a loaf of bread’s ingredients to being an ingredients-list speed skimmer.
what do i miss?

i have read 6 books on monsanto, corn subsidies, big agriculture, the farm bill, etc. i have read 2 memoirists i would like to emulate. i have about 20 sites bookmarked that i have yet to read, mostly current studies and news items that wouldn’t be in books yet. “the omnivore’s dilemma” is on my coffee table to read yet. may 3 is 2 days away! that’s my official start date for writing the big thing.
i think it sounds so pretentious to say, “yah, i’m writing a book.” at the same time i feel like a fraud: who am i to write a book? meanwhile mom says i’m writing my memoir, and i feel that’s a little too broadbased and STILL pretentious; i’m 33 – what do i have to write about, anyway? so, i need a code word for this project. extended blog entry? i’m writing a blog extension? hmmm.
and, i’m also trying to most of the writing on google drive, at least copy/pasta when i’m done for the day to have a backup. i can make it shared so whoever wants to read it can take a look whenever. i’m not going to promise new material every day, and there might be times when i ask some of you to take a look and give suggestions. let me know if you’d like the doc(s) shared with you!

between some previous knowledge on poverty levels in the US and my current “big farm” research, i came to realization today. my powers of deduction came up with this (in all caps so i wouldn’t lose it in my very long document of quotes):
THE GOVERNMENT POVERTY LEVEL IN THE US IS BASED ON COST OF FOOD FOR FAMILY OF FOUR. THE COST OF FOOD HAS NOT RISEN RELATIVE TO EVERYTHING ELSE WITH INFLATION. THE COST OF FOOD REMAINS LOW DUE TO SUBSIDIES FROM FARM BILL TO INDUSTRIAL AGRICULTURE. GOVERNMENT POVERTY LEVEL REMAINS TOO LOW FOR WORKING PEOPLE TO GET A HAND UP. THE GOVERNMENT IS REGULATING THE POVERTY LEVEL THROUGH FARM BILL (WHICH IRONICALLY INCLUDES FOOD STAMPS) – INSTEAD OF GIVING THE HANDOUTS TO POOR PEOPLE THROUGH GOVT PROGRAMS, IT IS GIVING THE HANDOUTS TO BIG INDUSTRIAL AG.

you may have noticed a huuuuge increase in my archives on the right hand side lower in the page. i just spend 4 hours going through my old LJ entries, tagging them, and uploading them. i still have to go through quite a bit and delete some of the more, uh, interesting ones, especially now since so many work-related people search this stuff (seriously – what was i thinking back in 2004? – oh yeah, that no one other than 20-somethings went online to look for this stuff. it was true). so….a lot more reading material out there if you’re bored out of your skull one afternoon.
i ALSO created a new twitter handle for all things DS related – @DevilsSyrupBook, so i will push posts about DS to that account, and all other stuff to my main twitter account. plus, if i’m going to do this book, i want to grab up that handle before someone else does.

so it starts

i spend a good chunk of my weekend reading through books and finding websites for my devil’s syrup book. a lot of it i already know; i just need a legitimate source. i also looked up how long a memoir should be, and they’re averaging around 80,000-100,000 words – thats twice nanowrimo! good thing i have longer than a month, i guess.
then i rewatched “king corn” which is what prompted my strike in the first place, and it just made me more po’d at the whole industry. what a racket. time to go full-out unprocessed foods, i tell ya.
anyway, i heard something funny at walmart yesterday (step one: stop shopping at walmart) while i was picking out my eggs (i went through THREE cartons before finding uncracked eggs…). there were two girls there picking out eggs.
girl 1: if XXX were here, he would get the cage-free eggs.
girl 2: i used to buy those…but then i realized i wasn’t trying to save the world.
this if funny and sad at the same time. sad because if everyone tried to save the world, guess what? we probably would. funny cuz of the way she said it. it was just perfect timing. and the two together made it awesome because then i put down my cheapo eggs bought the cage-free eggs. if she won’t save the world, i will.
